document() has been around since XSLT 1.0. doc() is new with XPath 2.0. As I understand it, XPath 2.0 defines document() in such a way that it works the same way as the old one, whereas doc() is defined as a more primitive function that takes a single string (and only that) as argument. Since document() takes either a string or a node set coerced to a set of strings, I'd continue to use it unless I had a reason not to. In your particular case it might not actually make any difference.
