Sorry to add yet another option to your palette of choices, but I think
Cocoon (http://xml.apache.org/cocoon) is a great way to do on-the-fly
conversions of XML to PDF, among many other formats.
The front page of the standard Cocoon installation includes a simple
example of dynamic XML to PDF generation, using the XSLT and FOP
processors that have been mentioned in previous replies to your
question.
