So now the guy can go to lunch during the 
downtime and almost make it back.

The trick is failover.  The problem of 
attacking an unrealistic requirement 
with a simple solution is cost:  what 
solution makes it realistic.  Like many 
out of the box solutions, you have 
to redefine the requirement.  No one 
system typically leaves you with one free 
lunch.  Two might.
