This is probably not going to be much help, BUT...!

The XSLT Spec includes an example which uses 'text/xml' [1].
It references the "Associating Stylesheets 
With XML Document" spec [2], but the link is broken(?)

I notice that the Schema draft [3] which includes a stylesheet 
uses 'text/xsl' and specifically references an IE5 stylesheet.

The Project Gutenbert XML e-texts [4] use CSS rather than XSL, 
and use the 'text/css' type, which apparently IE5 also recognises.
